There was one episode in the southern part of Italy where young Italian chefs were creating food fusion in their restaurant, but calling it by the same traditional Italian food term. The hosts, Carluccio (God rest his soul) and Genaro, remarked that if you they wanted to make a food fusion, by all means do it "BUT GIVE IT ANOTHER NAME." Especially the Italians, their traditional recipes ARE VERY SACRED. Ex. Putting ketchup on spaghetti sauce is fine, BUT DON'T CALL IT SPAGHETTI BOLOGNESE. Well explained di traditional ang ginawa nya. Totoo naman, dami version ng carbonarra at ibang dishes. Sa kanila egg yolk gamit, outside italy cream ang gamit. Same thing sa spaghetti bolognese/marinara tomato sauce na bland ang lasa cos homemade lahat from scractch/fresh. Nakakataw though, sa sinabi salt in the end parang steak. Haha. Pero in europe common may pepper at salt sa table, meaning lagi dagdag ng salt ang pepper in the end.
